A lot of our guests have an interest in a crash course on regional cuisine to be held during their holidays.  We listened and have launched "Regional Cuisine On Demand"! Our cooking stages focus on the different aspects of regional food in Italy .
Emphasis will be placed on how food relates to the local lifestyle, culture,regional economy and local resources.Participants will be introduced to Slow Food -  the various products and produce available only seasonally-  through expert demonstrations and tastings.
Our goal is to bring you the simple, understated, authentic regional Italian cuisine, with a particular focus on Umbrian styles, rich with our exquisite extra virgin olive oils, superior local wines (Rosso and Sagrantino di Montefalco) and Norcia's most celebrated salami and cured meats. Natural, fresh and simple food that we will prepare with the products of our own orchard and vegetable garden.
 
We can organize tailored stages or our guests can select:
 
Basic Italian cooking course
 
- Treatment of basic ingredients,appetizers, soups, first & second courses, side dishes and desserts respecting the classic sequence of  our cuisine.
 
Pastry course
 
- Treatment of basic ingredients used in pastry making.Preparations of cakes, tarts,creams & sauces, jams & marmalades and our family famous custard pie.
 
 Truffle course
 
- Exquisite preparations using our local "black gold".
Participants will learn to make superb dishes with truffles that make and occasion and truely special one. The typical Spoleto dish called  "Strangozzi al tartufo"- the epitomy of Slow Food -  will become a regular on the home table of the graduates of this course!
